I love a good turkey sandwich.
I don’t know if it’s because we definitely grew up a “sandwich” household – they were a common lunch offering – or what, but I legitimately crave them at least once every two weeks.
That said, I always put a different twist on each one I make.
Sometimes it’s hummus, turkey, lettuce/tomato/onion, other times it’s turkey with spinach and fresh mozzarella.
But today, today is a special fall edition turkey sandwich because there are crispy, fresh granny smith apples right smack in the middle!
For those of you that are thinking I’m off my rocker for including apples in a sandwich, I’m telling you, it’s good. It relies on the same logic as chips in sandwich – they offer a fresh crunch with each bite. And to me it’s even better than chips because you’re getting a burst of juicy flavor along with that crunch.
Combined with the creamy Vermont white cheddar, it’s a delicious combination. And since Thanksgiving is (somehow!) just around the corner, you can make it work for that time of year too by replacing the honey mustard with cranberry sauce and toasting the whole thing up!
And let’s not forget to mention that this little sandwich allows you to get whole grains, lean protein, fruit AND vegetable all in one bite. Not too shabby.
Ingredients
- 2 slices of your favorite whole wheat bread
- 1 tablespoon honey mustard
- 2 slices of fresh sliced or deli oven roasted turkey breast (such as applegate farms)
- 1 ounce white cheddar cheese, thinly sliced from the block
- 1/4 granny smith apple, thinly sliced (save the rest to enjoy alongside the sandwich)
- 1 handful fresh arugula
- Optional: freshly ground black pepper, carrot sticks to serve on the side
Instructions
- Toast your bread then spread both sides with honey mustard
- Spread arugula evenly on both sides
- Layer cheddar cheese on both slides (about 2-3 paper-thin slices on both sides)
- Top cheese with thinly sliced granny smith apples on both sides
- Place turkey in the middle and top with freshly ground black pepper if using
- Press the sandwich together, slice in the center and serve with remainder of granny smith apple and sliced carrot sticks
