avocado, asparagus & parmesan egg toasts

crisp whole grain toast spread with creamy avocado then topped with veggie-packed scrambled Eggland’s Best eggs and finished off with freshly shaved parmesan creating a wholesome breakfast the whole family will love!

For those of you that have followed me for a while, you know that I absolutely love eggs.  They make a GREAT vehicle for sneaking some extra veggies into meal time.  Whether you’re whipping them up into a frittata, scrambling them or throwing together an omelet, there’s always a chance to get some extra veggies in with them!  To show you just how true it is I’ve whipped up this simple but delicious avocado, asparagus & parmesan egg toast – a breakfasts that’s packed with protein, veggies, heart-healthy fats and whole grains not to mention packed with flavor!

To add even more nutrition into this dish, I’ve made it with Eggland’s Best which are unique compared to other eggs in that they contain six times more vitamin D (which we all know is hard to find in food!), 25% less saturated fat, more than double the omega-3s, ten times more vitamin E, and more than double vitamin B12.  Talk about a good boost of nutrition in one easy meal!
