What do you do when you have leftover apple slices in the fridge?

You make an apple cranberry buckwheat bake!

Apple Cranberry Buckwheat Bake

Ingredients:

  • 1/4 cup buckwheat flour (ground from raw buckwheat groats)
  • 1 tbsp buckwheat groats
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/2 diced apples
  • 1/4 cup soymilk
  • 1 tbsp. dried cranberries
  • 1 tsp vanilla
  • 1 whole egg

Directions:

  • Preheat oven to 350*
  • Mix dry.
  • Mix wet.
  • Pour wet into dry.
  • Grease oven safe dish.
  • Bake for 30 minutes.
  • Create a hole in the center and fill with natural peanut butter

I definitely prefer the oven method for these guys.  You just need to make sure you can wait out the 30 minutes!

      It just says “large” on it – but I think it’s 4.5″ 🙂
