I love this time of year because it’s full of all my absolute favorite produce.
Apples, pears, sweet potatoes, brussel sprouts…the list goes on.
Ever since i made this simple summer strawberry salad I’ve been loving grain salads. They come together so quickly, especially if you spend a little time prepping ingredients on Sunday. I always like to make a batch of farro over the weekend so all I need to do is pull out my ingredients and assemble during the week day.
Once I’ve got the farro and greens in there then I can toss in fruit (fresh and dried), nuts, beans (or other protein of choice) and cheese. I kept this one simple with just walnuts and feta cheese and even my meat-eating husband approved!
An added bonus to grain salads? It allows you to hit all the main food groups in one fell swoop. The farro provides your grains, arugula offers some veggies, apple, pears and dried cranberries are hitting the fruit group, the walnuts are providing healthy fat and a little protein along with the cheese.
I don’t know about you, but any one-dish meal that I can serve up easily during the weekday is good by me!
Ingredients
- 4 cups arugula
- 1 cup farro, cooked
- 1 apple, chopped
- 1 pear, chopped
- 1/4 cup dried cranberries
- 1/4 cup walnuts or pecans
- 1/4 cup feta or goat cheese (more or less as desired)
- Olive oil and balsamic or red wine vinegar to dress
Instructions
- Combine all ingredients into a bowl and toss to evenly disperse the ingredients.
- Drizzle with olive oil and vinegar
