I yie yie.

Is it Friday yet?!

It was definitely a long Monday for me and I’m happy to have it behind me!

I was up before the sun this morning and did a quick 20-minutes of yoga to start my day off on the right foot (literally)!

Then I dug into a nice, warm breakfast –

This is my version of Starbucks Perfect Oatmeal using just whatever I had on hand.

Into the bowl went:

  • 1/2 cup Old Fashion Oats
  • 1 tbsp. chia seeds
  • 1 cup water

Nuked for 3 minutes and then topped with:

  • 1 tbsp. brown sugar (which I think might have been a bit aggressive, I might do less next time)
  • Golden and regular raisins
  • Dried cherries
  • Sliced almonds

On the side was coffee + soymilk which quickly got transferred to my travel container as I flew out the door.

One Statistics class + the start of my homework later, I was ready for a mid-morning snack!

After this I had my first Orientation to Dietetics class today which I’m super excited for. Β The class is basically a bunch of RDs coming in to tell us what they do for a living and allowing us to ask questions about it. Β I’m hopeful that after this course I’ll have a clear idea of what I want to do with this degree (right now I have about 1 million + ideas!).

I dug into lunch after this class (there’s nothing like thinking to get your appetite going) which was just a simple turkey sandwich on a whole wheat baguette with lettuce, mustard, avocado and onions. Β On the side I crunched on some baby carrots.

Two more classes followed and then I was done for the day!

I ran to the Bi-Lo near school to pick up a few essentials (fruit, brown rice, whole wheat bagels, etc.) and then came home and changed into my comfortable clothes as fast as possible!

I of course had to dig into some of my goods right away πŸ™‚ Β Grapes + Luna bar held me over perfectly until dinner!

Which was super easy thanks to the last of our Easiest Ever Turkey Meatballs.

Served over whole wheat bow ties with a slice of bread.

We ended the evening with a nice walk…

And now I’m calling it a night!

I have a loooooong day of Chemistry ahead tomorrow πŸ™

    Yay, you’re officially a Dietetics student! I loved the class with the guest speakers (it’s a standardized part of all Dietetics programs) and I promise that Chem won’t be as bad as you think.

    Hey Cait! So proud of you! Keep up the good work!

    I use the microwave from time to time too but I try not to often. I am into a healthy living lifestyle as well and My aunt once told me…if you care so much about what you eat and how you treat your body you should care just as much about the factors outside like using the microwave. I thought about what she said and I think she’s right so I try to limit my use of it. I just thought I would share the message πŸ™‚

    I feel you on long Mondays. Today was my first day of law school and it was llloonnnggg. But at least it’s not chemistry πŸ˜‰

    Love that you make your own Starbucks oatmeal! I should start doing that!

    Love that last picture of the sky!! How do you like that flavor of Luna Bar? I normally go for the peanut butter or cookies ‘n’ cream variety but bought it to try!! Considering nuts & chocolate might be the best combo yet, I have high hopes :)!

    So glad you are enjoying your class. I would have loved to learn more about RDs careers while in school. It wasn’t til my internship that I learned a lot more.

    sounds like an exhausting but good day! glad that you dump from regular mug to travel mug for, you know, your travels. I love my real mugs so much, I ended up just carrying them along in the car with me. several sloshes, and I think at least two full cups spilled all over my car. you would think I’d have learned at one! but my mug love runs deep… haha.

      Hahaha yup! That’s exactly what has happened to me and why I’ve forced myself to switch over! But I’m the exact same way – I love a mug of coffee. Travel mugs just don’t compare. If only they could make lids for them!!
