BLACK BOTTOM BANANA CAKE

Blackbottomcake

Sorry for the banana kick lately.  That’s what happens when Target has them for 24 cents each.  I somehow ALWAYS overestimate the amount of fruit that’s capable of being consumed or cooked with in one week.

I’ve really had to get creative with this batch – especially since I don’t like bananas any other way than cooked into things.

I was tempted to do chocolate chip banana muffins but ultimately decided to branch out a little more and do something maybe not everyone has seen before.

After a quick search for “banana recipes” – I came across this recipe for black-bottom banana bars and I was completely sold.

{black-bottom banana cake} – recipe from tasteofhome

makes: 12 servings (depending on how you slice it)

ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 3 medium bananas, mashed
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 1/4 cup baking cocoa

directions:

  1. preheat oven to 350 degrees F and prepare a 9×13 inch baking pan by spraying with cooking oil
  2. in a large bowl cream butter and sugar until light and fluffy.
  3. beat in egg and vanilla then stir in mashed bananas.
  4. in a separate bowl, combine flour, baking powder, baking soda and salt
  5. add dry mixture into wet and mix well.
  6. divide the batter in half and add in baking cocoa to one half, mixing to combine.
  7. spread cocoa half of the batter evenly across the bottom of the pan then layer the second half on top
  8. swirl the layers a bit with a toothpick and then place into the oven.
  9. bake for 25 minutes or until a toothpick inserted in the center comes out clean.  cool on a wire rack.

    My husband’s favorite cake is banana. He always asks for it for his birthday..never fails. Maybe next time I will surprise him with this delicious twist!
