What if I told you that you could have all the flavor of apple pie without all the hassle?
If you’re super exciting and jumping up and down right now like “yes, yes, yes, just give it to me!” (<– name that Friends scene!) then you’re in luck, because that’s exactly what I’m about to do!
These truly took me 5 minutes to pull together, I kid you not. And they honestly have all the flavor of my mom’s apple pie (which is the standard upon which I measure all apple pies!).
The thing I love most about them is that you’re not confined to apples. You can do a mix of pear and apple, you can toss in raisins, walnuts, whatever it is that you want, you can pretty much do here.
But honestly, regardless of what you stuff them with, if you serve them hot out of the oven with a scoop of vanilla ice cream, you will swear you’re eating apple pie!
And maybe the best part about them is that you can literally cut it open, scoop some ice cream in and you’ve got yourself a portable apple pie! I mean there is truly nothing you can complain about there!
And these definitely don’t need to be confined to Thanksgiving. They would be a delicious addition to any brunch spread honestly.
Whenever you find yourself with some leftover apples, all you need to do is buy a box of puffed pastry, grab a few things from your pantry and you’ve got pretty much everything you need to make these
They’re also great to bring to parties – people will think you spent hours working on creating them and be so impressed. Only you and I will know just how easy they were 🙂

Ingredients
- 2 sheets puff pastry
- 4 apples, peeled, cored & thinly sliced (envy, macintosh or granny smith are great choices)
- 1 tablespoon lemon juice
- 2 tablespoons butter
- 1/3 cup brown sugar
- 1/3 cup white sugar *see note
- 1–2 teaspoons apple pie spice or ground cinnamon
- 1 tablespoon water
- 1 tablespoon corn starch
Instructions
- Preheat oven to 400 degrees F and line a baking sheet with a silpat or parchment paper
- Peel, core & slice apples then toss with lemon juice and set aside
- Place a large non-stick skillet over medium-low heat and melt butter.
- Once butter is melted, add apples and cook for 4-5 minutes until just soft.
- While apples are cooking, combine water & cornstarch in a small bowl stirring until well combined. Set aside.
- Add sugars and cinnamon to the apples, stirring to combine, and cook for another 2 minutes. Then add cornstarch slurry. Cook for another minute or so then remove mixture from the heat and allow to cool.
- Remove puff pastry and lay flat. Cut each square into 4 equal squares. Repeat with second sheet of puff pastry.
- Place each smaller square on a small piece of parchment paper (this helps make the turnovers easier to move once filled), then place the apple filling into the center of each square.
- Once all squares are filled, fold over diagonally to form a triangle. Place on prepared baking sheet and bake for 25 minutes or until golden brown.
Notes
Sugars: You can use all brown sugar if desired, I like to use equal parts granulated white and brown sugar, but this would come out perfectly delicious with all brown sugar as well.
If you can’t find apple pie spice: Make your own by combining 1 1/2 tablespoons ground cinnamon, 1 1/2 teaspoons ground nutmeg and 1 teaspoon ground allspice
