We made it back to Charlotte!

Last night ended up being a ton of fun.

Great food, great people – and overall really nice event.

Despite not staying out too late, we managed to sleep until nearly 10am!  It’s always such a shock to me when this happens because it’s so unusual for me.  I always know that it must mean my body really needed the sleep.

Due to our late rising, we missed breakfast (which I was pretty bummed about) so we headed down to an early lunch instead.

Ice water with lime to quench my thirst:

And delicious chicken tacos for my meal:

Served on whole wheat corn tortillas!

The chicken in these tacos were absolutely incredible.  So moist and so well seasoned.  Highly recommend lunch at The Ocean Bar & Grill if you’re ever in the area!

After lunch we spent some time on the beach…

Then sadly had to go back to our room to shower and pack up to get ready to leave 

But not before stopping for a quick afternoon snack:

A soy latte and a giant oatmeal raisin cookie.

SO good.

After showering and packing up we were off to the airport where we stopped at Quizno’s for a quick dinner:

Chicken Caesar Salad Wrap with Sun Chips for me.

Not the best thing I’ve ever had but it did the trick in filling me up.

Before heading to our gate I stocked up on some plane snacks:

And now I’m off to face plant into bed!

    Glad you enjoyed the rest of your trip and vacations are all about sleeping in way past your normal wake up time. Sounds like a wonderful getaway. Glad you made it home safe and sound. 🙂

    I still eat breakfast despite the time when I wake up. It’s too good to pass up!

      Yes!! I was so happy with how good it was (sometimes it’s hit or miss) but I’m definitely saving this for future reference!

      And I hear ya on the breakfast – we scoured the whole hotel hoping we could get some last minute waffles somewhere but no luck. I’d rather have breakfast than lunch any day!

    Hi Cait! Yummy looking tacos! And m&’s too 🙂 If it’s not too personal, will you post about your life now (did you move permanently down to NC before school?) and how you met Chad? I’m sure it’s a cute story! 😉

      Of course! I’m happy to share – I’m in NC right now as I study for the GREs and apply to programs. The hope is to be able to get into school around here but I’m applying all over the east coast for the most part 🙂 Chad and I met when I was a senior at Boston College and he was at his first job there out of grad school. We reconnected about a year ago and began emailing and catching up on each other’s lives and then things just kind of took off from there! Thanks for asking 🙂
