Life’s a Picnic

Another great day comes to a close.

Chad and I headed out for a 4-mile run in this perfect weather. If only weather could be like this all the time – a cool breeze always blowing at your back!

We came home, showered and then Chad, myself and his aunt packed up the picnic basket and headed to our barbecue!

We had all the makings for a great cookout –

I even manned the grill

Onto it went corn (fully in the husks per Chad’s aunt’s instructions) and homemade turkey burgers!

The corn smelled incredible while it cooked!

I definitely want to use this method in the future.

While the grill did it’s thing, I threw together a salad…

Mixed greens, avocado, shredded carrots, walnuts and dried cranberries.

And Chad’s aunt Denise (who joined the party late last night!) cut up the cantaloupe:

Which we all greedily snacked on before dinner

Before long we were pulling everything off the grill and digging in!

Turkey burger on whole wheat buns, topped with colby cheese, avocado, mustard, ketchup and lettuce.

Salad on the side and a couple of kettle cooked bbq chips for crunch!

And then it was time for CORN!

So unbelievably good.

After corn it was dog time!

Can you tell we had a puppy on our hands?

She was absolutely adorable. It took all my strength not to steal her. Her coat is super soft – it’s like snuggling with a fleece blanket when you hold her!

The rest of the evening was spent simply enjoying each other’s company…

So much fun.

To cap off the perfect summer evening Chad and I stopped for some gelato!

    Looks like a great time! I love grilling corn right in the husk; so easy and tasty. And that salad is awesome. It wouldn’t be accused of being a typical boring side salad! πŸ™‚

    this is semmmi-unrealted but, i tried a waffle stack for the first time this morning after seeing you have them so often….and it was deLICIOUS! i even mixed chia seeds into the greek yogurt and everything! seriously…sooo good.

    So interested to find out how you grilled that corn in the stalk. Did you peel any of it beforehand? And how long did you leave it on for?

      We didn’t peel it beforehand – just ripped off the husk so it wouldn’t catch on fire. I’d say we left it 30-40 minutes πŸ™‚ We peeled a little section of it to check and make sure it was soft. It worked out great!
