Nose Stuck in the Books

Just call me Belle because I spent the rest of the afternoon doing my best impression of her!

The only time I got up from my seat was to grab the above snack.  Otherwise my behind stayed firmly planted in it’s place!

I had planned on going to the gym when Chad got home but I unfortunately wasn’t far enough along with my material and being that I have class again tomorrow night, I had no choice but to forgo it.

I think morning exercise is going to have to make a comeback!

Dinner was fabulous.

We had picked up some ground turkey meat (Jenni-O 93/7!) with the plan of making turkey burgers for dinner one night…and after the day of studying I had – a burger and fries were calling my name!

Lucky for me Chad happily replied “sure!” when I asked if we could do this for dinner tonight.

I based the recipe off of Martha Stewart’s Favorite Turkey Burger recipe omitting what I didn’t have and didn’t really want.

Cait’s Favorite Turkey Burgers (serves 4)

Ingredients

  • 1 1/2 pounds ground turkey (93 percent lean)
  • 1/4 cup dried breadcrumbs
  • 1/4 cup Dijon mustard
  • 1 garlic clove, minced
  • Coarse salt and ground pepper
  • Cooking spray (for grill)
  • 4 slices of pepperjack cheese

Directions

Heat grill to high. In a medium bowl, use a fork to gently combine ground turkey with breadcrumbs, mustard, and garlic; season generously with salt and pepper.  Gently form mixture into four 1-inch-thick patties.

Lightly oil grill. Place patties on hottest part of grill; sear until browned, 1 to 2 minutes per side. Move patties to cooler part of grill; continue grilling until cooked through, 5 to 10 minutes per side.  Top with pepperjack cheese for the last 2 minutes allowing cheese to fully melt.

Serve on a whole wheat bun with lettuce, avocado, onions and mustard.

So incredibly good.  By far my favorite turkey burger recipe ever.

    I love just about everything Jenni-O! And I haven’t tried the peppermint Luna bar yet…I’ve wanted to grab it off the shelves in the grocery store a number of times, but my hands always go towards something chocolate/peanut buttery lol

      It’s definitely one of my favorites – I highly recommend it as a change up from the chocolate/pb (my other go-to!)

    I love turkey burgers! I’m going to have to try this recipe. I’m always looking for ways to change it up. 🙂 Luna bars are my favorite!
