Peanut Butter Jelly Time!

Morning!

Hope everyone’s Mondays are off to a good start.

I’m a little slow to get moving this morning so I decided to tackle my desk tasks first thing. Β Before I did that though, breakfast was needed.

Peanut butter and jelly oats!

I tried something different with this batch…

I normally add the strawberries right at the start of cooking…

But today I held them out for the first half of cooking so that they would still be warm but wouldn’t disintegrate completely (which is what normally happens when I add the softer fruit like berries and peaches in first thing).

And it worked out really well!

Peanut Butter & Jelly Oats {for one}

Ingredients:

  • 1/2 cup rolled oats (I used Trader Joe’s and I highly recommend them, they were fluffy, fluffy, fluffy!)
  • 1 tbsp. chia seeds
  • 1 cup water
  • 6 sliced strawberries
  • Tbsp. favorite natural peanut butter
  • Tbsp. favorite strawberry fruit spread (I used Great Harvest Charlotte Strawberry Spread)
  • Sprinkling of unsalted peanuts

Directions:

  • Combine first 3 ingredients and cook according to instructions (I used the microwave)
  • Top with following 4 ingredients
  • Enjoy!

    Yummy! I almost always wait to add my fruits until the end of cooking. I like them warm, but still basically intact. Especially blueberries. πŸ™‚
