I knew as soon as I had this salad on vacation that I absolutely had to come home and recreate it.

Every bite was the most perfect marriage of flavors.  For such a simple salad, the ingredients it contained went a long way.

I absolutely love arugula – it has the perfect tang and makes a big salad feel a little different from my usual mixed greens.

Add in the contrasting flavors and textures of the quinoa, onion, smooth avocado, crunchy cucumbers and juicy tomatoes and it literally is heaven on a fork.

QUINOA & ARUGULA SALAD

Ingredients

  • 2 cups arugula
  • 1/4 cup quinoa, cooked
  • Handful of cherry tomatoes, washed and halved
  • 1 tablespoon diced red onion
  • 1/4 avocado, sliced
  • 1/4 cup seedless cucumbers, washed and diced
  • Balsamic vinaigrette

Instructions

  1. Combine all ingredients together, top with dressing and enjoy!

    Mmmm! Looks like the perfect salad to me, though I think I would be tempted to put a fried egg on top, which is what I do with most of my salads 🙂 I love the bite and freshness of arugula too.
