This easy and oh-so-flavorful panini is made on the grill giving it hints of char which go perfectly with the sweet strawberry and tangy arugula and goat cheese.
This panini is basically the sandwich version of one of my favorite salads (which makes me think I need to make that salad and blog it at some point too!).
The tart goat cheese goes SO well with the full-bodied balsamic glaze and sweet strawberries. The arugula adds a little pepperiness and it’s all completed with the char grilled bread.
It may be one of my favorite sandwiches that I’ve made in a long time. The goat cheese gets nice and creamy on and melty on the grill and the strawberries warm just slightly…it’s just heavenly.
But don’t be fooled, this sandwich isn’t for the faint of heart. It’s messy but oh so worth it (in my opinion!)
Overall it’s just a great way to mix up the usual sandwich routine. Don’t get me wrong, I love a good turkey sandwich, but there’s only so many I can take in a row before I find myself craving something a little different.
And different this most definitely is! You’ll be the envy of all your friends at lunch, I promise!

Description
This easy and oh-so-flavorful panini is made on the grill giving it hints of char which go perfectly with the sweet strawberry and tangy arugula and goat cheese.
Ingredients
- 2 slices of hearty whole grain bread
- 1/3 cup goat cheese (more or less as desired)
- 4–5 strawberries, washed & thinly sliced
- Small handful of arugula
- Balsamic glaze
- Freshly ground black pepper
Instructions
- Divide cheese in half and place half on one slice of bread and half on the other slice of bread
- Place a small amount of arugula on top of each slice of bread followed by thinly sliced strawberries
- Drizzle each side with balsamic glaze and a sprinkle of black pepper
- Sandwich the two sides of the bread together, then press down
- Grill over medium high heat for 2-3 minutes each side or until you begin to see char marks.
