T-T-T-Tuna!

My waffle stack did an incredible job of holding me over this morning!

It was well after noon before I started to feel like I needed to eat something.

Lunch was surprisingly delicious!

I was craving tuna and luckily happened to have some on hand.

But I realized at the last minute that I didn’t have mayo.

I poked around in the fridge to see what else I could use as a substitute and realized I had some plain greek yogurt!

I might have been making it up in my mind because I had my heart so set on having tuna, but I’m pretty sure I’ve heard of subbing greek yogurt for mayo in dishes so I went with it.

The result? Β It worked!

I honestly didn’t miss the mayo at all. Β I added a little spicy brown mustard for flavor and slathered the other piece of bread with 1/4 avocado and some lettuce.

I loaded it all onto 2 slices of toasted Trader Joe’s 100% Whole Wheat Sourdough and I have to say, as good as the inside was, the bread MADE the sandwich.

HIGHLY recommend it!

The orange in particular was fabulous.

After lunch I sat down to check my email and found my Brightcove pictures were in from the Tar Heel 10-Miler!

I’ve never actually ordered these photos…a screenshot of the proof usually satisfies for me πŸ™‚

Aaaand I saved the best for last.

Here’s the oh-so-simple recipe:

Cookies n’ Cream Brownies

Ingredients:

  • Box of favorite brownie mix
  • Package of oreos {I chose original because it’s what I had on hand but you could choose your favorite flavor!}

Directions:

  • Prepare boxed brownie mix according to box instructions
  • Grease an oven-safe pan
  • Pour half the brownie batter into the prepared pan
  • Layer with oreos {you may have to break some in half depending on the side of your pan}
  • Pour remaining half of brownie batter on top of the oreos being sure to spread evenly and completely cover the oreos
  • Crush 10-12 oreo cookies and pour crumbs on top of the batter in the pan being careful to spread evenly so as to cover the entire pan
  • Bake brownies according box instructions.
  • Enjoy!

Now I’m off to move around a little!

    omg those brownies look so insanely good!

      They seriously were good! And SO SO easy!

      And I know – I never thought of it until today (cause I was desperate) but it worked out perfectly!

    That is SUCH a good idea! Much healthier than mayo! And although I don’t think I can even really talk about them in the same comment as ‘healthy swaps’ and tuna… those brownies look to DIE for!!! In fact I think you earned a big fat piece just by swapping mayo for greek yoghurt! πŸ˜‰

    I think tuna is my favorite sandwich; I can’t seem to get enough of it! I have an idea for a tuna salad this upcoming week, I think you might like it.

        PS – I’m so glad you hear you say you think tuna is your favorite sandwich. I LOVE it but it’s such a polarizing choice! People either love it or hate it!
