WHOLE GRAIN FUDGE COCOA BROWNIES

I’ve been hankering for a good, chewy brownie lately so this weekend I professed, out loud, that I would be making them.

I then proceeded not to get around to making them (seriously, where do weekends go?)… but luckily Monday productivity was on my side and I was able to get to it first thing so that gooey, chocolately brownies were on the table before lunch (somehow I managed to pass up digging in until AFTER I ate a well-balanced lunch – don’t ask me how)!

By far the best part of this recipe is it’s simplicity.  Not too many ingredients and only a few steps.  Nothing better than that as far as I’m concerned.

Ingredients

Not only that, but these totally hit the spot – and even better is that they hover just around 100 calories and they’re whole grain (not that anyone would know it).

{whole grain fudge cocoa brownies} – adapted from bon appetite

Ingredients:

  • Nonstick vegetable oil spray
  • 1/2 cup (1 stick) unsalted butter, cut into 1 inch pieces
  • 1 1/4 cups sugar
  • 3/4 cup natural unsweetened cocoa powder
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/3 cup white whole wheat flour

Preparation:

  1. Preheat oven to 325°. Line an 8x8x2 inches glass baking dish with foil, pressing firmly into pan and leaving a 2 inches overhang. Coat foil with nonstick spray; set baking dish aside.
  2. Melt butter in a small sauce-pan over medium heat. Let cool slightly. Whisk sugar, cocoa, and salt in a medium bowl to combine. Pour butter in a steady stream into dry ingredients, whisking constantly to blend. Whisk in vanilla. Add eggs one at a time, beating vigorously to blend after each addition. Add flour and stir until just combined (do not overmix). Scrape batter into prepared pan; smooth top.
  3. Bake until top begins to crack and a toothpick inserted into the center comes out with a few moist crumbs attached, 25-30 minutes.
  4. Transfer pan to a wire rack; let cool completely in pan. Using foil overhang, lift brownie out of pan; transfer to a cutting board. Cut into 16 squares.

      I had them out on my counter and was doing too many things at once I get cause I popped the pan in the oven and realize I never added them!! I was so sad!

    Gahh, I love this. Brownie perfection. Top one of those babies with some peanut butter + raspberries, and you have yourself a perfectly balanced meal (or something)!
