Is it Thursday?

I’m all mixed up on my days. Β Vacations will always do that to ya I guess…especially when you come back mid-week versus Sunday night.

But I’m not complaining!

If you follow me on Instagram or on Twitter, you probably saw my delicious dessert.Β Β 

Somehow, despite having ice cream last night, I woke up wanting yogurt! Β Actually, I woke up wanting one thing and one thing only: a waffle stack!

It’s been far too long since I’ve had one of these (like an entire week!).

I bought a fresh batch of strawberries yesterday (hooray for a semi-well stocked fridge again!) which were just begging to be used as part of this!

I toasted up 2 Trader Joe’s Multigrain Waffles…

then did the usual…

I carefully layered each waffle with:

  • 0% Plain Greek Yogurt + 1 tbsp chia seeds
  • Sliced strawberries
  • Natural peanut butter (still can’t bring myself to spend the big bucks on a new jar of sunflower seed butter…but boy do I miss it…)

Then all that’s left to do is dig in!

    I can’t believe that McDonalds’ chicken salad is the least caloric! AND 1/5 people think diet soda is healthy?! Craziness.

    Mmm those waffle stacks look so good! I haven’t tried mixing chia seeds with Greek yogurt yet – great idea!

    Really interesting infographic, thanks Cait! I’m going to have to try to find waffles in my local supermarket – those strawberries look so lovely and juicy! Sadly its still pretty cool in the UK so no lovely ripe berries for us

      Oh boo! You could maybe buy frozen strawberries?! They’re nearly just as good on waffles, it’s what I did in the winter πŸ™‚
