The perfect meatless Monday meal to make because you can bring leftovers for lunch all week long! The flavors only get better as they marinate in the fridge. Make a batch over the weekend and you’ve got dinner Monday and lunch for the week!

  • Serves: 4-6
  • Done in: 25 minutes
  • Tips: Serve with a nice hearty piece of crusty bread to mop up all that delicious broth after you’re done.

TUESDAY: Easy spiralized veggies & turkey marinara

This easy dish combined spiralized veggies, lean turkey breast and loads of flavor for a comforting dish perfect for cooler weather! Serve it up as is with a hearty roll, pair it with your favorite grain or throw it on top of a pizza crust!

  • Serves: 3-4
  • Done in: 25 minutes
  • Tips: Serve it up as is with a hearty roll, pair it with your favorite grain or throw it on top of a pizza crust (or in a calzone!). And don’t worry if you don’t have a spiralizer, you can just dice the veggies!

WEDNESDAY: Whole wheat black bean, corn & sweet potato quesadillas

These vegetarian quesadillas are a total crowd-pleaser and they couldn’t be easier to pull together! Serve them up with some chips and guac for a Mexican-style meal everyone will love.

  • Serves: 2 (can easily serve more)
  • Done in: 30 minutes (10, if you’ve pre-roasted the sweet potatoes)
  • Tips: Serve with all your favorite quesadilla dips (salsa, yogurt, guac) and you’ve got yourself a fully balanced meal!

THURSDAY: Caprese chicken with side salads

A super simple but delicious weeknight meal. Use store-bought breaded chicken breasts or make your own – either way this dish takes mere minutes to pull together and is full of flavor!

  • Serves: 2
  • Done in: 15 minutes
  • Tips: Use store-bought breaded chicken breasts (I love Applegate Farms) or make your own. Serve it alongside a grain, with a side salad or some steamed veggies to keep it really easy!

FRIDAY: Weeknight Baked Gnocchi

This easy, cheesy baked gnocchi comes together in just about 30 minutes making it a perfect Friday night meal!

  • Serves: 4-6
  • Done in: 35 minutes
  • Tips: You can serve this up as is or with side salads, crusty bread and wine to make it feel really special!
