While I love Fall, it’s not here quite yet which means you can squeeze in a few more summer dishes – like this spicy corn, peach & burrata bowl. this vegetarian-friendly dish combines some of the best summer flavors all in one easy grain bowl! done in less than 10 minutes, it’s as nutritious as it is delicious.
- Serves: 2
- Done in: 7 minutes (if you’ve prepped the farro ahead of time)
- Tips: If you’re so over summer and ready for fall, you can easily swap the peaches out for sweet potato, which would also be great. If you’re #meatlessmonday, this would go great with steak or chicken!
TUESDAY: One Pan Fully Roasted Dinner
Parmesan roasted potatoes pair with green beans and seasoned chicken for an easy dinner that comes together all on one pan. Serve with your favorite dipping sauce (BBQ & honey mustard are both great!) and you’re good to go!

- Tips: Serve this up with some whole grain rolls or garlic bread or side salads if you want a little extra veggies.
WEDNESDAY: Veggie packed lentil curry
This veggie packed lentil curry is a great way to switch up the usual weeknight meal. Loaded with fiber and veggies, it comes together quickly and is full of bold flavor!

- Done in: 15 minutes (if you’ve prepped the farro ahead of time)
- Tips: Pair this with some crusty bread to sop up the leftover broth at the bottom of the bowl and you’re good to go!
THURSDAY: 6-ingredient whole grain chicken, black bean and corn enchiladas
Using rotisserie chicken and a store-bought enchilada sauce helps these enchiladas come together in just minutes. Mix up the filling to make use of the ingredients you have on hand!

- Tips: Use rotisserie chicken and store-bought sauce to help these enchiladas come together in just minutes. Not a chicken fan? You can omit the chicken completely! Serve with guac, salsa, yogurt, hot sauce and fresh cilantro (plus some corn chips to scoop up all the filling as it falls out!).
FRIDAY: Brussel sprout & caramelized onion ravioli
It’s Friday. You deserve this 5-ingredient dinner like no one’s business! Done in less than 30 minutes with minimal cleanup!

- Tips: Not a brussel sprouts fan? This would also be great with steamed (or roasted) broccoli or asparagus. Or, nix the mixed in veggie all together and serve with an easy side salad.
