peanut butter chocolate chip energy bites

These have completely changed my life.

Not only are they delicious, but they are literally the easiest thing ever to pull together.

There’s something about the peanut butter/chocolate combo that works so well for my afternoon snack time. Β The chocolate is the perfect amount of sweetness and the peanut butter has the heft that I need to make it through until dinner.

I’ve made other ‘bites’ in the past but have done it with dates and nuts and find they’re just too sticky and impossible to work with.

These use just a few simple ingredients and a quick round in the fridge stiffens them up enough to easily form them into balls (or bars if you prefer!)

{peanut butter chocolate chip energy bites}

makes 15-20 bites

ingredients:

  • 1 cup oats (I used quick-cooking but old fashioned would work well too)
  • 1/3 cup clover honey
  • 1/2 cup natural peanut butter (I used smooth but crunchy would be great as well!)
  • 1/2 cup semi-sweet chocolate chips (or dark chocolate or white chocolate – whatever you like!)
  • 1/4 cup roasted peanuts (chopped)

directions:

  1. add all ingredients into a bowl, mix together well and refrigerate for about 10 minutes
  2. while dough is in the refrigerator, line a baking sheet with parchment paper
  3. remove dough and scoop 2 tbsp. out, rolling in hands and placing on the parchment paper
  4. store in the fridge and take with you as needed for a perfect on-the-go snack!

      Hahaha me too – I think it’s probably about 85% of the reason that I love it (that and I love anything that comes together in less than 10 minutes!)

    I just made these and they are delicious!!!! I didn’t have any peanuts but used crunchy peanut butter and added some shredded coconut. Turned out great!!

    Just made a batch of these to have for snacks during the week and I couldn’t stop sampling the dough as I was rolling them into balls! I think I’m going to need to make another batch πŸ™‚ I love that this recipe is so simple, easy, and quick!

      I’m so glad you like it! It’s one of my favorites as well – I make a batch almost every week because it’s so easy! And I have the SAME problem with sampling the dough, I’ve just started doubling the recipe for the start to be on the safe side πŸ˜‰

        So I just needed to come back and tell you that I’ve made these at least 5 more times in the past month. What is it about this simple combo of oats + pb + chocolate + honey that is just SO good?! Can’t get enough!
