You’re getting a little bit of comfort but not sacrificing the bounty of fresh summer produce.
And you don’t have to limit yourself to one or two types of fruit – feel free to go crazy with whatever you have on hand.
They pretty much all go together beautifully!
Top with a drizzle of honey or maple syrup, add a little milk to get the consistency you desire and dig in!

Ingredients
- 1 cup old fashioned oats
- 2 tablespoons chia seeds (optional, in this recipe, I use these for texture purposes only – see note*)
- 1 teaspoon ground cinnamon (more or less depending on your preference)
- 1 1/3 cups water or milk (more or less as needed to cover the oats and allow them time to cook before all the water is absorbed)
- 2 tablespoons packed light or dark brown sugar (more or less for desired sweetness)
- 1/2 – 2/3 cup diced summer fruit
- Optional for serving: milk (any kind including non-dairy), honey or maple syrup, walnuts for crunch
Instructions
- Place oats, chia seeds, cinnamon and liquid into a pot. Stir to combine and then place over medium-low or low heat.
- Allow oats to cook 5-7 minutes, stirring occasionally or until liquid has been absorbed and oats are cooked (they will look gelatinous and gummy versus their flat raw form) – adding more liquid as needed for oats to complete cooking.
- When oats are done cooking, turn off heat, add in brown sugar and stir to distribute evenly throughout the oats.
- Place in a bowl, top with fruit (you can also choose to cook the fruit right in the oats if you don’t like the contrast of warm oats and cold fruit. If doing this, I recommend adding it in during the last minute or two of cooking – just enough to warm it but allow it to hold some of its shape) and additional toppings of choice.
Notes
- I like my oats to be on the thicker side. Adding the chia seeds helps to soak up some of the moisture which creates a thicker texture – if you like your oats looser, omit or halve the amount of chia seeds and add more liquid.
