this anything goes veggie pasta is a great way to use up whatever is left in your produce drawer at the end of the week! paired with some cooked pasta & topped with cheese, it’s a delicious simple meal any night of the week!

I had a bunch of veggies from this past week’s Misfits Market produce box that I needed to use up and I have to say, for a meal I kind of made up on the fly, it was SO delicious!

I didn’t want it to be heavily sauced so instead I just sautéed some garlic in olive oil and it paired so well with the dish.

I chose to top it with a little crushed red pepper and feta cheese, but it would also be delicious with parmesan, chopped basil or mozzarella.

There are honestly no rules to this dish, which is what makes me love it even more. You can customize it to work for you in whatever way you need!

Swap out the pasta for your favorite kind, throw in some chicken or white beans if you want a little more protein, top with pesto or marinara if you prefer.

You really can’t mess it up so have fun with it! It’s meant to be easy, customizable and delicious.

Description

this anything goes veggie pasta is a great way to use up whatever is left in your produce drawer at the end of the week! paired with some cooked pasta & topped with cheese, it’s a delicious simple meal any night of the week!


Ingredients

Scale
  • 2 cups raw veggies, chopped (any you have on hand will work – I used peppers & zucchini)
  • 2 cloves garlic, minced
  • Olive oil
  • Salt & pepper, to taste
  • 2 cups cooked pasta (I used Barilla’s Ready Pasta which takes just 60 seconds in the microwave!)
  • Optional: red pepper flakes

Instructions

  1. Place a large skillet over medium heat and add olive oil.
  2. Once olive oil is shimmering, add garlic and saute for about 30 seconds, or until fragrant.  Lower heat as needed to ensure it doesn’t burn.
  3. Add veggie mixture, salt & pepper and saute until veggies are softened to your liking (7-10 minutes, depending on how tender you like them).
  4. Add cooked pasta to the skillet and additional olive oil as desired.  Sprinkle with red pepper flakes.  Toss well, cooking for another 2 minutes or so.
  5. Turn off heat, toss in cheese and add additional salt, pepper & red pepper flakes as desired.
  6. Plate & serve!

    Hi! I was going to make this tomorrow. Roughly how much feta cheese would you say to add?

      I honestly didn’t measure but you could start with 1/4 cup and add more as needed after you taste 🙂 Let me know what you think of it when you make it! 🙂
