these pizza bagels come together in minutes and are great for an easy dinner or quick lunch!

I made these the other day for an easy lunch and they were so good I had to share the recipe!

I love when I scrounge things up using what I have and they turn out to be amazing.

And these can totally be made on a pizza crust if you have one, on english muffins or even on toast.

There are truly no rules!

I really didn’t even follow much of a recipe to make them.

I had some pizza sauce, mozzarella cheese, fresh broccoli and feta on hand and I just kind of piled on what would fit on each bagel half and baked!

It would be delicious with whatever veggies you have on hand so if you don’t have broccoli, don’t fret! Spinach, tomatoes, mushrooms, zucchini – anything would work.

Don’t be afraid to make it your own – I promise it’ll still be great! There’s really no messing this one up!

Description

these pizza bagels come together in minutes and are great for an easy dinner or quick lunch!


Ingredients

Scale
  • 1 bagel (I used Thomas’ 100% whole wheat)
  • Pizza sauce (as much or as little as you like)
  • 1/2 cup shredded mozzarella (more or less as desired)
  • 1/4 cup broccoli florets, chopped
  • ~4 tablespoons crumbled feta cheese (more or less as desired)
  • Optional: drizzle of garlic oil (just olive oil processed with fresh garlic clove), dried oregano, balsamic glaze, freshly chopped basil

Instructions

  1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper or tin foil
  2. Split the bagel in half and lay each open side up.
  3. Spoon some pizza sauce on either half and spread around evenly.
  4. Top with shredded mozzarella followed by chopped broccoli and feta.
  5. Sprinkle with dried oregano or freshly chopped basil if desired (you can also top after baking).
  6. Bake for 10-15 or until cheese is melted and bagel is lightly browned around the edges.
  7. Top with additional desired toppings and enjoy!
