So…
Cake and ice cream….
Okay for breakfast, right?
To be totally transparent, if it’s not okay, I’m not sure I care.
So you might be better off just telling me it is.
It is Friday after all, and if that doesn’t mean cake and ice cream is okay for breakfast, I’m not sure what does!
Okay, in all seriousness, as much as this resembles cake and ice cream in looks and taste, it was actually a pretty healthy breakfast!
Cake & Ice Cream Buckwheat Bake (for one):
- 1/4 cup buckwheat flour
- 1 tbsp buckwheat groats
- 1 tbsp chia seeds
- 1/2 tsp cinnamon
- 1/4 tsp baking powder
- 1/4 cup soymilk
- 1 cup fresh strawberries (sliced)
- 1 tsp vanilla
- 1 whole egg
Preheat oven to 350* Mix dry ingredients. Mix wet ingredients. Pour wet into dry. Grease oven safe dish. Bake for 30 minutes. Cool slightly and top with toppings of choice (I went with yogurt, sunflower seed butter and a big old Cville Cluster)!
So dang good.
I had some coffee on the side to wash it all down, because what’s cake & ice cream without coffee!? 😉
I’ll tell you: nothing.
Have a wonderful Friday everyone!!
Strawberry Buckwheat Bake (for one):

- 1/2 cup fresh strawberries (sliced)

Serious breakfast envy going on over here. That looks.sounds amazing! I need to get some buckwheat to experiment with…
Cait says
You definitely do – I bet you would LOVE this!
Margarita says
I gots to get on getting some buckwheat and start making those yummy bakes! Ice cream on top of a bake for breakfast is totally acceptable especially if there’s coffee.
Cait says
Yes you definitely do!! They’re really delicious 🙂
Brittany @ GOtheXtraMile says
Holy moly, yum!!! I have some buckwheat flour in the pantry but no actual buckwheat. I want to make this!
Cait says
I think you might be able to make it without the groats but I’m not sure. Definitely worth giving a try! 🙂
Sarena (The Non-Dairy Queen) says
Yes please! I like waffles a la mode too for breakfast. I think it’s perfectly ok to have a little fun with your meals! This looks amazing!
Cait says
I LOVE the waffles a la mode idea!!
Brittany says
I have real cake for breakfast sometimes when I am feeling naughty. It’s how I let my inner wild chick out. This looks delicious!
Cait says
Hahah I love it! And thank you – it was quite good, I gotta say!
MigraineMe says
You really had me believing it was cake and ice cream, which in turn made me think, “self, if Cait can have that for breakfast, maybe I can treat myself to a cake and ice cream breakfast one morning soon…” And, then you burst my bubble. 🙂 Nonetheless, still looks like a great breakfast that I would still love to try!! Happy Friday!
Cait says
Ahaha oh no! Sorry to disappoint! I might argue this is BETTER than cake and ice cream for breakfast though so at least that! I’m definitely not above an occassional cake and ice cream for breakfast though so if you want it, I say go for it! 🙂
Katie says
Ahh! Be still my heart. I want to live at your house on Fridays. Oh, I mean EVERYDAY. You take over breakfast and I’ll be in charge of…bringing a chubby baby to the table?
Cait says
That sounds like the deal of a lifetime! I ACCEPT! 🙂
Kristen @ Swanky Dietitian says
Oh my gosh, I am seriously drooling over here! I had cereal for breakfast. 😉
Cait says
Haha – I wish I could share with you!! Though sometimes nothing beats a good bowl of cereal!
Katie @ Talk Less, Say More says
