CHOCOLATE CHIP COOKIE GREEK YOGURT PARFAITS

A little mid-week indulgence is good for everyone right??

I’m just going to pretend you all said “YES!!” to that question up there.

I’m sure it won’t come as a surprise to any of you when I tell you that I love greek yogurt.  I mean, you’  But what some of you may not know is that I eat it about 3 nights a week as dessert.

So when Jessica posted her easy chocolate chip cookie cheesecake parfaits, I immediately thought about how they could be equally delicious if I subbed in greek yogurt.

I made three and there are none left, so I’ll leave it up to you to interpret that.

This would be a great way to get a little extra protein and dairy into kids as an after school snack…you could even let them pick the layers (if you wanted to go healthier you could use whole grain fruit & nut granola, dark chocolate chips or a whole grain cereal) and assemble it with you!

{chocolate chip cookie greek yogurt parfaits} – adapted from how sweet it is

ingredients:

  • 6 oz. container of plain or vanilla greek yogurt
  • package of newman’s own organic cookies, roughly chopped

directions:

  • layer roughly chopped cookies and yogurt, alternating between layers until the jar is full
  • grab a spoon
  • dig in

    Too funny…throw in some strawberries, blueberries, and a drizzle of peanut butter adn you have my breakfast from yesterday. I am a cookie fiend, but they tend to be a bit too sweet for me most of the time…I find the tartness of the Greek yogurt is just enough to balance it out for me! And peanut butter just makes everything better! 🙂

      Agreed! I always usually get plain froyo because I love that tartness! And agreed on the peanut butter…just the best 🙂
