So, randomly the other day I was scouring the fridge to find a snack and as I pulled out the different items I had, these cucumber, radish and hummus bites just kind of came together.
They were WAY better than I was expecting them to be – I found myself pulling together more after quickly devouring the first several that I had made.
I find that I forget about radishes every once in a while and each time I rediscover them I think about how crazy I am for ever forgetting about them in the first place.
Cucumbers on the other hand, I never forget about. They’re just the perfect, refreshing snack and I find they fill me up perfectly without making me feel weighed down and heavy. Slice them up, add a dollop of hummus and top with a radish slice. The perfect snack.
Ingredients
- 1 seedless English cucumber, washed and sliced thick
- 2 radishes, washed and sliced thin
- Hummus (preferred flavor)
Instructions
- Layer a dollop of hummus on the cucumber slice, top with a radish, serve.
- If you prefer, you can make a sandwich out of the cucumbers with the hummus and radish slice in between.
