With Memorial Day right around the corner, I’m already planning my menu! Growing up, we would had a huge neighborhood party every Memorial Day full of fun, sun and of course, grilling. It was our neighborhood’s way of kicking off the coming summer and to this day, it still signifies that for me.
Back then the menu was simple: beef burgers and hot dogs. As I’ve grown older however and begun to host my own Memorial Day celebrations, I’ve broadened that menu quite a bit.
Each year I try to come up with one plant-based dish to grill up alongside the old standbys. And every year people marvel at the fact that those plant-based options end up being one of their favorites. It’s become somewhat of a fun challenge for me to create a meatless main dish that will knock the socks off everyone.
So, with that in mind, this year I came up with these Greek Walnut Sliders and I’m so excited to serve them – I know they will be an instant hit. They’re hearty like a true meat-based burger plus they’re offer up fat and plant-based protein. I’m certain even the biggest meat eaters in attendance are going to happily gobble them up!
I love turning to Mediterranean flavors because I’m from a big Greek family, so the flavors of the Mediterranean are some of my absolute favorites.
I love using walnuts in my meatless dishes because they’re so incredibly versatile. You can do so much with them from just tossing them on top of dishes to grinding up and incorporating them right into the base. I think they make an excellent option when you’re looking to replace meat because they have a nice hearty mouthfeel – so you get the same texture, even without the meat!
Given the Greek base of these sliders, I chose to top them with traditional Greek flavors: tzatziki sauce, cucumbers, red onion and lettuce. In my opinion, it’s the perfect way to finish off a delicious slider. That said, feel free to go crazy with the toppings that speak to you – olives, hummus, green peppers…the sky is the limit!

these easy greek walnut slides are a no-fail, no-crumble veggie burger that are a great switch up from your usual meat-based burger!
Ingredients
- 1/2 cup chopped walnuts
- 1/2 cup panko bread crumbs
- 1/3 cup crumbled feta cheese
- 2 eggs
- 2 garlic cloves
- 1 teaspoon oregano
- 1/4 teaspoon salt and freshly ground black pepper
- 1 15 oz. can chickpeas, rinsed and drained
- 1 teaspoon olive oil
- 6 wheat slider buns
- Toppings: freshly sliced cucumber, tzatziki sauce, tomato, red onion, lettuce
Instructions
- Place walnuts, bread crumbs, feta*, eggs, garlic cloves, oregano, salt and pepper together into a food processor and blend until well combined. Place chickpeas into the mixture and pulse until combined (it’s okay for a few chunks of chickpeas to remain).
- Transfer to a bowl and cover with plastic wrap. Refrigerate at least one hour or overnight.
- After refrigeration, remove and spoon two tablespoons of the mixture out, rolling into a ball between the palms of your hand, then flattening to about ½ inch thick disc.
- Heat 1 teaspoon olive oil in a large pan over medium high heat. Once oil is heated, place burgers into the pan, cooking on each side until browned (about 4-6 minutes each side or until the thermometer reads 160° F).
- Additionally, you may grill the burgers. To do so: place burgers over medium heat, lower the cover and cook about 3-5 minutes. Lift grill cover, flip burgers and cook for another 3-5 minutes on the other side or until a thermometer reads 160° F.
- Place cooked burger on a wheat slider bun and top with toppings of choice. Serve immediately.
Notes
*If you want the feta to be chunkier, reserve and fold in by hand after processing the other ingredients
