these lightly sweetened, kid-friendly rustic apple muffins aren’t fancy but they are absolutely delicious.  coming together with just 12 ingredients and in about 25 minutes, they’re perfect for the fall season!

I don’t know about you guys but as soon as September hits, I’m all about those apple recipes!  Typically we’ll have a big apple haul from apple picking but I don’t think that’s going to happen this year so I’ve just been relying on my regular old store-bought apples.

I recently got a bag in my last grocery order and had one lone apple left.  I decided to whip up these lightly sweetened rustic apple muffins to have on hand to use as part of easy meals and snacks for myself and Owen.

And boy am I glad that I did because they’ve been totally hitting the spot!  I’ve been crumbling them over yogurt bowls in the morning, slathering them with peanut butter for an easy grab and go snack and we even served them up warm with vanilla ice cream for dessert one night!

I love a recipe that can be repurposed in so many different ways and this is definitely one of those gems.

Even better, these require just 12 ingredients (most of which you’ll likely have right in your pantry!) and 25 minutes of time!

I used siggi’s vanilla 0% yogurt since we always have a 24 oz. tub on hand and it worked perfectly, but you can also use the plain or vanilla whole milk varieties (I’ve baked these with both and they work out no matter what!).  The yogurt’s simple ingredients lend a hint of vanilla flavor plus a nice boost of protein to the recipe.

And since I know back to school has looked different for many of us, this is also a great recipe to let kids help out with  Because it’s simple in ingredients and instruction, it’s a perfect opportunity to let them measure, mix and stir!

Ingredients

Scale
  • 1 cup white whole wheat flour (all-purpose and whole wheat pastry flour will also work)
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 – 1  teaspoon ground cinnamon
  • 1/2 teaspoon apple pie spice
  • 1/4 teaspoon salt
  • 1/2 cup plain or vanilla siggi’s yogurt (I’ve used both 0% and 4% varieties with success)
  • 3–4 tablespoons packed brown sugar
  • 1/4 cup canola oil
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 apple, peeled & diced
  • Optional for topping: oats, additional sprinkle of cinnamon

Instructions

  • Preheat the oven to 375 degrees F and grease or line a 12 cup standard muffin pan with paper liners.
  • Combine flour, baking powder, baking soda, cinnamon, apple pie spice and salt in a mixing bowl and whisk to combine.
  • In a separate mixing bowl, combine yogurt, sugar, canola oil, eggs and vanilla extract.  Use an electric beater to combine.
  • Add wet ingredients to dry ingredients and stir a few times to incorporate. When there are a few flour pockets remaining, fold in apples.
  • Mix until just combined and pears are evenly distributed.
  • Scoop batter into 10 of the 12 prepared muffin cups (filled just below the top rim).
  • If using: sprinkle with oats or additional cinnamon.
  • Bake for 16-20 minutes or until a cake tester or knife inserted in the center comes out clean (or with just a few wet crumbs.
  • Let cool for 5 minutes, then enjoy!
