Don’t let the simplicity of this recipe fool you into believing they’re dull. I promise they’re not.
For me it’s actually the exact opposite. I find the taste of plain potatoes really unappealing- like to the point that I don’t really even like potato chips. So that means you should really trust me when I say these are full of flavor.
In fact, even though I reeeeallly recommend you try the balsamic glaze (this was only $2.99 at Trader Joe’s!), I would willingly eat these without it.
This is such an easy dish – done in 30 minutes and it will pair well with just about any dinner. Definitely worth trying…even if you don’t like potatoes.
{simple roasted red potatoes with balsamic glaze}
serves 4
ingredients:
- 8 red potatoes
- 1-2 tablespoons olive oil
- Salt and pepper to taste
- Balsamic glaze for drizzling
directions:
- preheat oven to 450 degrees F
- prepare a cookie sheet by lining with foil
- slice each potato into eigths putting pieces into a medium size mixing bowl
- drizzle olive oil, salt and pepper over potatoes and mix so potatoes are well covered with the mixture
- place potatoes in a single layer on the prepared baking sheet
- bake for 30 minutes, shaking potatoes up halfway through and cooking for the remaining 15 minutes
- drizzle with balsamic glaze and serve warm.
