Don’t let the simplicity of this recipe fool you into believing they’re dull. I promise they’re not.

For me it’s actually the exact opposite.  I find the taste of plain potatoes really unappealing- like to the point that I don’t really even like potato chips.  So that means you should really trust me when I say these are full of flavor.

In fact, even though I reeeeallly recommend you try the balsamic glaze (this was only $2.99 at Trader Joe’s!), I would willingly eat these without it.

This is such an easy dish – done in 30 minutes and it will pair well with just about any dinner.  Definitely worth trying…even if you don’t like potatoes.

{simple roasted red potatoes with balsamic glaze}

serves 4


  • 8 red potatoes
  • 1-2 tablespoons olive oil
  • Salt and pepper to taste
  • Balsamic glaze for drizzling


  1. preheat oven to 450 degrees F
  2. prepare a cookie sheet by lining with foil
  3. slice each potato into eigths putting pieces into a medium size mixing bowl
  4. drizzle olive oil, salt and pepper over potatoes and mix so potatoes are well covered with the mixture
  5. place potatoes in a single layer on the prepared baking sheet
  6. bake for 30 minutes, shaking potatoes up halfway through and cooking for the remaining 15 minutes
  7. drizzle with balsamic glaze and serve warm.
