s'mores yogurt parfaits - a fun twist on a classic favorite // cait's plate

Somehow, don’t ask me how, but somehow 4th of July is right around the corner!  It makes me want to cry a little bit to know that summer is flying by so quickly!  My summer bucket list seems to grow exponentially every year and there just never seems to be enough time to accomplish everything!

That said, it’s not going to stop me from trying!

Something that’s always on my summer to-do list?  S’mores!  S’mores and summer go together for me like peanut butter and jelly.  I’ve loved them since the days when my sister and I would curl up on the couch with loads of pillows and blankets and watch The Sandlot over and over while shoving our faces with s’mores and repeating lines.

However, it’s not always easy to get access to an open flame in the summer (hello all you other city-bound, apartment-living folks out there!) so I wanted to find a way to bring the classic flavors of s’mores to you without accidentally setting your place on fire.

Remember the time I made frozen s’mores waaay back in 2012?  Well this is the same idea – s’mores, in a different form.

But I promise you it’s just as tasty and it’s something you could even justify eating for breakfast if you really wanted to!  You’re getting some protein from the yogurt and some whole grain from the graham crackers – add some fruit and your meal isn’t half bad!  Remember, it’s all about balance 😉

s’mores yogurt parfaits

Yield: 2 servings

Ingredients

  • 1 cup toasted marshmallow yogurt (such as Light & Fit)
  • 1/2 cup crushed graham cracker
  • 1/2 cup mini chocolate chips

Instructions

  1. Divide ingredients into 4 parts.
  2. In two small jars or glasses, layer yogurt, graham crackers and chocolate chips.
  3. Repeat until all ingredients are used.

Notes

If you can't find marshmallow yogurt, a plain greek or vanilla bean would also work!
