When I was working (and in grad school for that matter!), I had to pack my lunch almost every day. I definitely understand how easy it is to feel completely out of ideas and want to default to bringing canned soup or the same Trader Joe’s Super Spinach salad day in and day out!
To combat that, I’m going to start a Lunchbox Series where I’ll feature dietitian-approved packed lunches that hopefully give you a little inspiration for your next packed lunch!
In each lunchbox lunch, I’ll aim to include a whole grain, lean protein (including dairy), healthy fat, fruit and/or vegetable. Exactly the same way I structure my meals in the Daily Meal Plan series.
Today’s Lunchbox: 1/2 a turkey and cheese sandwich on whole wheat with lettuce, tomato, onion and mustard, a large garden salad with olive oil and vinegar dressing and grapes
