this easy pasta can use whatever veggies you have on hand, a jar of spicy arrabbiata sauce and some ground turkey for a simple weeknight dish!

This is one of my most favorite easy weeknight meals.

It’s a great way to use up a bunch of veggies you have on hand, comes together in a matter of minutes and is so hearty and comforting.

It’s really a dish where anything goes which, if you couldn’t tell by now, is one of my favorite types of dishes.

You can swap the turkey for ground chicken, pork or even tofu. Any veggie combo really works from mushrooms to asparagus, peppers, tomatoes, spinach, zucchini, there’s truly no wrong choice.

You can finish it all off with a sprinkling of any type of cheese and serve over any pasta that you happen to have.

I recommend serving with some buttered dinner rolls or a side salad to round it all out!

But perhaps the best part about the dish is that the leftovers taste even better as the flavors marinate together in the fridge.

Which is great because then you’ve got lunch the next day!

Description

this easy pasta can use whatever veggies you have on hand, a jar of spicy arrabbiata sauce and some ground turkey for a simple weeknight dish!


Ingredients

Scale
  • 1 lb. ground turkey
  • 1 lb. pasta, any kind you like best
  • 2 cloves garlic, minced
  • 2 cups chopped mixed veggies (I used red onion, pepper and zucchini)
  • 1 24 oz. jar arrabbiata sauce (more if you like a saucier pasta)
  • Salt & pepper
  • Olive oil and/or butter
  • For garnish: freshly shredded parmesan cheese, chopped basil

Instructions

  • Cook pasta according to package instructions.
  • While pasta cooks, place a non-stick pan over medium heat and add oil.  Once oil is shimmering, add ground turkey, salt & pepper.  Cook turkey until nearly completely browned (about 7 minutes) then place on a separate plate and set aside.
  • Drain pasta, place back in pot, add butter or olive oil to prevent sticking and set aside.
  • Wipe out the same non-stick saute pan used to cook the turkey, add more olive oil and place over medium low heat.
  • Once oil is shimmering, add garlic and saute for 30 seconds (until just fragrant) then add veggies, additional salt & pepper as desired and saute for 6-7 minutes or until tender.
  • Add turkey back to pan with veggies in addition to sauce and allow to simmer over low heat for 10-15 minutes.  Add additional salt & pepper to taste.
  • Serve sauce over pasta the top with shredded cheese & basil.

    Hi Cait! First of all, I have made a number of your recipes and have loved them all!! Thank you for doing what you do! Secondly, Im wondering how much ground turkey you recommend using in this recipe? Thanks!
