this 2-ingredient BBQ chicken comes together quickly thanks to the use of the instant pot. super tender and loaded with BBQ flavor – it’s a perfect addition to any dish!

Would you believe me if I told you this tender, melt-in-your-mouth bbq chicken requires just 2 ingredients?!

Well believe it baby cause it’s true!

The other night I wasn’t exactly sure what I was going to make for dinner. I scrounged through the fridge and found some boneless skinless chicken thighs. I whipped them out and threw them in to the Instant Pot (aff. link to the one I have) with about 1/2 a jar of BBQ sauce.

Twenty or so minutes later, dinner was on the table and everyone was so happily eating that I don’t think a sound was uttered for a good 5 minutes (a total rarity at our dinner table!).

If you don’t have an Instant Pot, don’t worry – you can also make this in the slow cooker (I’ve provided instructions for that in the notes of the ‘recipe’).

But honestly, if you’re on the fence and you have a toddler, the BIGGEST endorsement I can make for the Instant Pot is that it creates some beautifully tender meat dishes which is PERFECT for toddlers who hate dry meat.

So if you’re not a whiz with cooking protein and you have a little one, I can’t recommend the Instant Pot enough. I have both this and a crock pot and find myself defaulting to the Instant Pot much more for chicken and meat-based dishes not only to save time but also because I find it much easier to control the chicken not drying out!

ANYWAY, the sky is the limit with this chicken! You can make BBQ chicken pizzas, pulled BBQ chicken sandwiches topped with coleslaw, serve it over some mac and cheese or alongside some corn on the cob and roasted potatoes.

Description

this 2-ingredient BBQ chicken comes together quickly thanks to the use of the instant pot. super tender and loaded with BBQ flavor – it’s a perfect addition to any dish!


Ingredients

Scale
  • 1.25 lbs. boneless, skinless chicken thighs
  • 18 oz. jar of your favorite store-bought BBQ sauce (this will likely be more than you need)

Instructions

  1. Place the chicken and about 1/2 the jar of BBQ sauce into the Instant Pot and stir well.
  2. Cover the Instant Pot and set steam valve to sealed position. Cook on HIGH PRESSURE for 13 minutes.
  3. After the 13 minutes, allow the pressure to release naturally for 5 minutes; then release the remaining pressure manually and open the lid.
  4. Remove the chicken to a bowl or cutting board using tongs and then shred the chicken with two forks.
  5. If you’d like to reduce the BBQ sauce, set to sauté and simmer, 5 minutes (you may need to add a little more).
  6. Add the chicken back into the pot, stir and set to sauté for 2 to 3 minutes.
  7. Let steam release naturally for a couple minutes and then remove the lid and serve as desired!

Notes

  • To cook in a crockpot, place the chicken thighs in the bottom of the bottom of the slow cooker. Add 1 cup chicken broth and cover. Cook on LOW for 6-7 hours. Shred with tongs or roughly chop the cooked chicken and toss with bbq sauce.
