The mid-day meal rut is REAL, am I right? Lunch is one of my favorite meals and even I get in lunch ruts sometimes! To help offset that for you, I’ve rounded up 5 easy lunches to make this week!

MONDAY: Turkey apple cheddar sandwich

Easy, packable and beyond delicious – this sandwich is a staple for me when it comes to fall lunches. Pair it with some veggie sticks, hummus or dressing for dipping, a little extra fruit and some crunchy chips for a mid-day meal that’s sure to keep you going!

TUESDAY: Tofu caesar salad

Crunchy homemade croutons, creamy feta cheese and roasted tofu that’s crisp on the outside and tender on the inside makes this one of my favorite salads. Not a tofu fan? You can swap chicken or chickpeas. This also makes a great wrap! Pair it with some fruit and an additional carbohydrate and you’ve got yourself an easy lunch in no time!

WEDNESDAY: Vegetarian harvest wrap

Just had to include this one. It’s one of my absolute favorite things that I’ve eaten this fall. It comes together quickly, it’s packable, budget-friendly and vegetarian (with the option to easily add meat if you prefer!). Not much to dislike about this baby!

THURSDAY: Creamy sweet potato soup with roasted parmesan brussel sprouts and sliced almonds

This creamy dairy-free soup is full of seasonal flavor and is done in 25 minutes! It’s hearty and comforting for a mid-day meal that will warm you up and energize your afternoon. Not into sweet potato? This roasted butternut squash & apple soup with parmesan toasted croutons is also delicious and full of autumn flavors! If you pack either soup, just add the toppings right before serving so they don’t sog in the soup.

FRIDAY: Easy mediterranean buddha bowls

These mediterranean buddha bowls are packed with some of my favorite flavors. They come together in minutes and are loaded with fiber, protein and heart-healthy fat. Pack the tahini & yogurt separately if taking this on the go then add right before serving.
