One plane, One train, One automobile

Today was crazy.

I know I’ve said that in the past – but today I really mean it!

Clara and I flew from Charlotte to New York and are now happily settled in Connecticut.  That’s a lot of states for a poor little doggie…I think it definitely took it’s toll on her!

But let’s back up first.

After our Five Guys feast last night it took some time this morning for my appetite to really hit me – it wasn’t until nearly 10am that I finally felt like eating something.

I knew I wanted to incorporate my Banana Nut Muffins with Oatmeal Streusel in some way and originally I was thinking I wanted it crumbled over yogurt but when my appetite came, it wanted oatmeal – so who was I to argue?

I crumbled the top of one of my muffins over 1/2 cup of oats cooked with 1/2 cup water and 1 tbsp. chia seeds.

A spoonful of Trader Joe’s natural creamy peanut butter on top and viola!

Served with a steaming hot mug of coffee + soymilk.  

Breakfast at it’s finest 

After breakfast Clara and I set out on a walk – I figured tiring her out before all the traveling would be best…it definitely upped the chances of her sleeping through the majority of it.

30 minutes later we were back home, I showered and Chad came home to take us out to lunch!

We went to Salsarita’s for some fresh mexican food!

I got the “taco salad” but requested it not come in the fried tortilla shell.

Romaine, pico de gallo, chicken, black beans, onions and guac!

So good.

Clara and I sadly said our goodbyes to Chad at the airport, got some good reading material and a snack for the plane ride…

…and we were on our way!

One plane, one train, one automobile [and a nap!] later…

We were home!

I peeked in the freezer to see what I had that would be quick and easy for dinner…

It may not look pretty but boy did it taste good after 7 hours of travel!

Off to hang with Mom!

    Sounds like a crazy day of travel and it must feel so good to be home. Enjoy CT! I’m headed that way on Friday but too bad we won’t be close. 🙁 I would have died if we could have met up! Sometime soon though!

    I love that fresh salad! Those are my favorite types of salads…loaded with fresh salsa. Sorry Chad is gone. Hopefully it will be a quick trip for him!

    guacamole makes a salad! it is a toss up between that or hummus as my favorite toppings. Sometimes i even add both haha indecision often leads to the best combinations 🙂
