WHOLE GRAIN PUMPKIN BUTTERSCOTCH BARS

If you guys have read this blog for a while, you know that I’m a big fan of pumpkin and butterscotch.

It’s an underrated flavor combination if you ask me.  While I absolutely adore (and would never turn down!) anything pumpkin-chocolate-chip flavored…I definitely urge you to give this flavor combo a try if you haven’t before!

{whole grain pumpkin butterscotch bars} – adapted from Martha Stewart

ingredients:

  • 2 cups white whole wheat flour
  • 1 tablespoon pumpkin-pie spice
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 8 tablespoons unsalted butter, room temperature
  • 4 tablespoons plain greek yogurt
  • 1 1/4 cups sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup canned pumpkin puree
  • 1 package (12 ounces) butterscotch chips

directions:

  • Preheat oven to 350 degrees F
  • Line a 9×13 inch baking pan with foil
  • Combine flour, pumpkin-pie spice, baking soda and salt in a bowl and set aside
  • In another bowl, cream together butter and sugar until light and fluffy then add egg beating until smooth
  • Add in greek yogurt, vanilla, pumpkin puree and stir until just combined
  • Combine dry and wet ingredients
  • Fold in bag of butterscotch chips
  • Pour batter into prepared pan smoothing over with a spatula so that it evenly covers the pan
  • Bake for 35-40 minutes or until a toothpick comes out clean
  • Cool in pan then remove and slice into bars

    I always have leftover butterscotch chips in my pantry (probably because I don’t shove them by the handful in my mouth like chocolate chips…hah). I also have a can of pumpkin in there…it’s meant to be!

    Wonderful sounding recipe, however you have neglected to specify when to add the flour mixture that was set aside. Those of us who bake a lot can figure it out, but there may be some who would appreciate that detail.

    I just saw a recipe on a friend’s blog for peanut butter granola bars and she mentioned using butterscotch chips in them. And then I got to thinking…I’m not sure I’ve ever had them! 😯 I’m all about pumpkin with just about anything though so I will definitely keep this flavor combo in mind!

    Hi Cait! I just discovered your blog & I love it! Can’t wait to try some your recipes! What kind of butterscotch chips do you use? I’ve been searching far and wide for a healthier version than I can find in my local supermarket but it doesn’t really seem like there’s an “all-natura”l brand out there. I eat healthy majority of the time so I’m not too worried about it but I was just curious if you had any suggestions. I saw a website that had instructions on how to make your own but it looked a little complicated. I’ve never tried the combination of butterscotch & pumpkin but it sounds so delicious.

      Unfortunately these aren’t any super healthy kind of butterscotch chips – just Nestle brand! If you want, you can cut down the amount of chips to half which could help make them a bit healthier!
