This was actually an accident.
Not the accidents that I’m used to either where I spill half my brownie batter all over the bottom of the already-preheated oven so that it becomes baked brownies without the pan.
This was actually happy accident.
I’ve been SUPER into smoothies lately (there’s actually another one coming to the blog soon) and in the process of attempting to make yet another one, this happened.
Here’s a little smoothie note for you: don’t use all frozen fruit.
Here’s a little vegan berry banana ice cream tip for you: use all frozen fruit.
The clumping of the all-frozen fruit that’s so detrimental to smoothie making actually makes an awesome vegan ice cream.
It’s super simple, healthy, packed fiber, vitamins and minerals and the best part of all? It’s ice cream that you can eat for breakfast!
Ingredients
- 1 cup frozen mixed berries
- 1 frozen banana
- 3/8 (or 6 tablespoons) of vanilla unsweetened almond milk
- Sliced almonds
Instructions
- process frozen berries, banana and almond milk together in a blender or food processor until smooth
- scoop out into a bowl and top with sliced almonds
Notes
berries may need to thaw slightly before being added or be processed in batches as they can clump and get stuck together making it impossible to process
