I had some browning bananas on my kitchen island but really didn’t feel like any of my usual go-tos (like this banana. I wanted something a little more seasonal. After a quick search online, I found this easy whole grain pumpkin banana bread recipe and knew that it was exactly what I was looking for!
It’s light, fluffy and pairs perfectly with a slather of peanut butter! I also liked to crumble a little over a bowl of plain greek yogurt and some diced apple making an easy breakfast. You can also get really wild and make french toast out of it (which may or may not have happened this past weekend!).
The whole grain flour helps to give this some staying power and you can easily pair it with some fruit and nut butter to make it a well-balanced option.
