5 quick and easy, balanced dinner ideas to get you (or your whole family!) through the work week!

Back with another round of weeknight dinners for you!  5 quick and easy meals that your whole household can enjoy.  Catch up on previous plans here.

MONDAY: Whole wheat pesto greek yogurt baked mac and cheese

creamy pesto is combined with a rich, cheesy sauce, poured over whole grain pasta and roasted brussel sprouts then topped with crispy bread crumbs and baked to perfection. 

  • Done in: 70 minutes (only about 10 minutes of active cooking)
  • Serves: 6-8
  • Tips: Serve with a side salad or steamed veggies to round out the meal.  You can also fold in any steamed veggie right into the bake and no one will even notice!  I’ve made brussel sprouts, broccoli as well as asparagus varieties in the past!

TUESDAY: Spiced sweet potato and black bean tacos

most of the elements in these quick and easy sweet potato and black bean tacos can be prepped over the weekend so all you have to do is heat and assemble when you’re ready to eat!

  • Done in: 30 minutes (less if you prep elements ahead)
  • Serves: 2-4 people
  • Tips: Serve with corn chips, salsa and extra guac for dipping!  If serving to a toddler, serve elements separately or over brown rice, burrito bowl style.

WEDNESDAY: Greek walnut sliders

these vegetarian-friendly walnut sliders are a fun take on a classic cookout!  packed with mediterranean flavor, they’re sure to be a hit with the whole household!

  • Done in: 20 minutes
  • Serves: 4-6 
  • Tips: Serve with sweet potato fries and grilled corn on the cob for a true cookout experience!

THURSDAY: Healthier sausage & peppers

this dish has all the elements of a classic sausage and peppers meal but increases the nutrition by using whole wheat pasta, double the veggies and a leaner sausage.

  • Done in: 20 minutes
  • Serves: 4-6
  • Tips: Serve with a side salad and some crusty bread to round out the meal.  If serving to a toddler, serve all the elements separately and cut into manageable pieces. 

FRIDAY: California club pizza

you can’t go wrong with this riff on a CPK classic!  a store-bought wheat pizza dough saves you time (& adds nutrition!) without sacrificing any flavor.  

  • Done in: 20 minutes
  • Serves: 4-6
  • Tips: Serve with a side salad or just as is!  If serving to a toddler, leave the arugula and crispy off or serve as a separate element.
