5 quick and easy, balanced dinner ideas to get you (or your whole family!) through the work week!

Another week gone by! Don’t ask me how. But it’s Sunday, which means it’s time to pull together a meal plan for the week! So without further ado:

MONDAY: Black bean, corn & zucchini enchiladas

Perfect for #meatlessmonday, these easy enchiladas bring some of the best summer produce flavors to the forefront. covered in a zippy tomatillo sauce, this is a lighter, brighter, more summer-appropriate version of a classic comfort food dish.

  • Serves: 4-6
  • Done in: 30 minutes
  • Tips: Serve with corn chips, salsa and extra guacamole for dipping!

TUESDAY: Chicken taco lettuce cups

These easy chicken taco lettuce cups take all of 10 minutes to make and are a fun and different way to do #tacotuesday! Swap out your usual corn tortillas for lettuce wraps and get your grains with some corn chips on the side!

  • Serves: 4-6
  • Done in: 10 minutes
  • Tips: Serve with corn chips, salsa and extra guacamole for dipping!

WEDNESDAY: Roasted brussel sprout & caramelized onion whole wheat pasta bake

Roasted brussel sprouts and caramelized onions combine with four different  kinds of cheese to bring a burst of flavor to this easy, wholesome pasta bake!

  • Serves: 4-6
  • Done in: 30 minutes
  • Tips: This one-stop shop of a meal combines everything in one bite – whole grains, heart-healthy fats, protein and vegetables. If you want to bump up the protein even more, you can add some shredded chicken to the bake as well. Feel free to swap out the brussel sprouts for broccoli or another vegetable if they’re not your cup of tea!

THURSDAY: Zucchini parmesan chicken meatballs over zucchini noodles

these easy chicken meatballs sneak some extra veggies into the mix and no one will even notice! the whole meal can be completed in less than 20 minutes with little cleanup!

  • Serves: 4-6
  • Done in: 20 minutes
  • Tips: Serve with crusty whole grain bread, or mix your zucchini noodles with whole wheat pasta. You can also add a side salad or toss in some steamed broccoli and omit the zucchini noodles all together!

FRIDAY: Weeknight sheet pan veggie pizza

This easy weeknight sheet pan veggie pizza takes all of 10 minutes to pull together, uses whatever veggies & cheese you have on hand and can feed the whole household!

  • Serves: 4-6
  • Done in: 10 minutes (more if you’re making your own pizza dough)
  • Tips: Serve as is and save yourself any more dishes for the week – it’s Friday and you deserve to do nothing but throw this in the oven, eat it right out of the pan then relax!
