This easy ramen noodle bowl comes together with just 5 basic ingredients.  Done in just about 30 minutes, it’s a perfect weeknight meal option!

You guys know I love myself an easy weeknight meal.  Now that Owen has started school, weeknights have gotten even busier.  Now I’m not only trying to pull dinner together but also making sure that I get all his stuff together for the next day!  Which means, easy meals like these are exactly what I need! 

A huge part of why this meal is so simple is because it utilizes this Taylor Farms Coconut Curry Stir Fry Kit.  And I’m sure you’re thinking “big deal, stir fry veggies, you can get those anywhere.”  But this kit includes the sauce which is what makes it such a time saver!

Literally all you need to do is add a protein source and a grain source and you’ve got a complete (and incredibly flavorful!) meal on your hands.

And the other great thing about these kits is that you can use whatever you happen to have on hand.  Got a can of beans?  Throw those in!  Have some leftover brown rice?  Use that!  Anything really goes which makes it perfect for those nights when you’re just out of ideas.

Nothing better than a dinner that gets a meal on the table in less than 30 minutes, uses whatever you happen to have on hand and is full of fiber, protein and whole grains if you ask me!  I hope this recipe saves you on many a busy weeknight ahead!

Description

This easy ramen noodle bowl comes together with just 5 basic ingredients.  Done in just about 30 minutes, it’s a perfect weeknight meal option!


Ingredients

Scale
  • 1 block extra firm tofu, drained, pressed and cubed
  • 1 Taylor Farms Coconut Curry Stir Fry Kit
  • 2 block brown rice & millet ramen noodles
  • Olive oil
  • Salt & pepper, to taste

Instructions

  1. Preheat oven to 425 degrees F and line a baking sheet with parchment paper.
  2. Toss drained, pressed & cut tofu with olive oil, salt & pepper
  3. Bake for 20-25 minutes then remove from oven and set aside.
  4. Bring 4 cups of water to a boil then add ramen noodles.  Once noodles begin to separate, stir with a fork to encourage the separation then allow to cook for another 2-3 minutes.  Drain and set aside.
  5. While tofu bakes, heat 1 tablespoon olive oil in a large non-stick pan or skillet over medium-high heat.  Add the vegetables from the Taylor Farms Coconut Curry Stir Fry Kit cooking 4-5 minutes, stirring frequently.  Add sauce, tofu and noodles, tossing well so sauce covers every element.  Cook for another 1-2 minutes, then serve.
