It’s hard to believe it, but we’re actually not far away from cookout season!  To me the month of May officially kicks off the time where I make the switch to consistently eating indoors to dusting off the patio furniture and moving most meals outside!

Things feel a little strange right now, but I find that eating outside in the sunshine, birds chirping and gardens growing is one thing that can always lift my mood.

What are your go-to backyard BBQ dishes?  For me it’s not a true cookout without corn on the cob, a grilled protein and some kind of slaw.

And today I’m putting a fun citrusy twist on classic creamy slaw by adding some Sunkist® CA Star Ruby grapefruit to it!  I’m embarrassed to say that I’ve been late to the grapefruit game in life but now that I’ve discovered the sweet-tart flavor it can impart on more earthy dishes (like this slaw!) I can’t get enough!

And not only does it add such a unique flavor component to this dish, but it also takes just minutes (check my video out below if you don’t believe me!) to come together all while looking like a beautifully elegant and refined dish that took hours to make.

It pairs well with just about any protein – grilled salmon, chicken, shrimp, tofu – you can even just toss in some chickpeas and eat it as a main meal!

The CA Star Ruby grapefruit’s ruby color (which it gets from lycopene, a natural antioxidant) adds so much beauty to the dish in addition to offering up an excellent source of vitamin C and a good source of vitamin A and fiber.

Description

Ingredients

Scale
  • 2 tablespoons freshly squeezed Sunkist® CA Star Ruby grapefruit juice
  • 1 small shallot, minced
  • 1 tablespoons olive oil
  • 2 tablespoons plain whole milk greek or skyr yogurt
  • 1/4 teaspoon dijon mustard
  • 1/2 teaspoon sugar
  • Salt & pepper, to taste
  • 1/2 medium cabbage head, cored and shredded
  • 1 large Sunkist® CA Star Ruby grapefruit, cut into supremes
  • 1/2 ripe avocado, cut into 1/2-inch dice

Instructions

  1. In a large mixing bowl, combine minced shallot and grapefruit juice, set aside for 10 minutes.
  2. Whisk in olive oil, greek yogurt, mustard and sugar.  
  3. Season with salt & pepper
  4. Add cabbage, grapefruit, avocado and dressing.  Toss gently to combine.
  5. Serve with salmon, shrimp, or grilled chicken for a delicious side dish.
