I know there are going to be a lot of skeptical glances coming from the other side of this screen, but hear me out!
You know I’m a HUGE fan of the waffles with peanut butter and yogurt plus fruit right? Well, this is the same exact concept and I promise you it works just as well.
It still provides you a balance of whole grains, lean dairy protein, healthy fats and fruit – and the combination of those food groups together rarely fail me.
I like to use this when I get some really delicious bread on hand (like Trader Joe’s whole wheat tuscan pane) – I toast it up so it will provide a nice sturdy base, then slather the peanut butter across the top until it gets nice and melty and finish it off with yogurt, fruit and cinnamon (I also love apple pie spice!).
Think of it as an extra special twist to the toast and peanut butter with banana meal that I know everyone is on board with. You can also drizzle a little honey over the top if you need a little more sweetness.
The best part about this dish (other than the fact that it’s packed with nutrition) is that you can completely customize it to make it your own. Experiment with different nut butters, different fruits and different spices! There’s no end to how creative you can get with it!
Ingredients
- 2 slices of whole wheat bread
- 2 tablespoons natural peanut butter
- 4 tablespoons plain greek yogurt
- 1 apple, thinly sliced
- Cinnamon
Instructions
- Toast the bread
- Top each piece with peanut butter followed by greek yogurt
- Finish off with apples and a sprinkling of cinnamon
