Get ready to have everyone at your holiday brunch drooling!  This dish is not only so delicious but it’s so incredibly easy to make.  It takes about 10 minutes from start to serving it on the plate (and probably not much longer until it disappears from said plate!).

Not only does the dish taste incredible, but it’s packed with protein, heart-healthy fat and grains.  Serve it up with a glass of orange juice and you’ve got a completely balanced dish. To bump up the nutrition even more in this dish, I made it with Eggland’s Best eggs.  Eggland’s Best eggs contain six times more vitamin D (which we all know is hard to find in food!), 25% less saturated fat, more than double the omega-3s, ten times more vitamin E, and more than double vitamin B12!  Nothing better than adding an extra boost of nutrients to the dishes you’re serving up at the holiday breakfast table if you ask me 🙂 

I’ve detailed the recipe for two sandwiches, but trust me when I say that these will go fast.  You’d be best off whipping up at least 6 sandwiches depending on how big your crowd is…and be prepared to make even more after that!

Avocado, Turkey Bacon & Over Easy Egg Croissant Sandwiches

Ingredients

  • 2 croissants
  • 2 slices turkey bacon
  • 1 teaspoon butter or margarine (more as needed)
  • 2 large Eggland’s Best eggs, cooked over easy (or any way you like!)
  • 1 ripe avocado, mashed and divided into two

Instructions

  • Slice croissants in half lengthwise. Meanwhile, cook turkey bacon in a non-stick skillet over medium-low heat until browned and the edges begin to curl. Remove from heat and set aside.
  • Into the same pan (no need to wipe it out, the bacon drippings make the egg even more flavorful!), place butter or margarine, swirling the pan to coat.
  • Crack Eggland’s Best eggs directly into the pan and allow them to cook until the whites become opaque. Carefully flip each egg and cook on the other side for another 2-3 minutes. Remove from the heat and set aside.
  • Spread your mashed avocado onto both sides of your halved croissants then layer on your egg and bacon onto each sandwich. Slice and serve!
