Boring to Bright

Lunch was, admittedly, pretty boring.

I wasn’t feeling very inspired so I just put together a quick turkey sandwich on whole wheat.

I piled it high with lettuce, mustard and avocado then had some fresh cherries on the side.

It did the trick and powered me through my real project this afternoon –

Jumbo Peanut Butter M&M Cookies!

Chad actually requested these and I was more than happy to make them for him.

For the cookie base I used a Cook’s Illustrated Ultimate Chocolate Chip Cookie recipe but subbed in peanut butter m&ms for the chocolate chips.

They came out beautifully. Definitely worth making again.

Biggest challenge for the afternoon? Trying to save at least one for Chad to have when he gets home!

    There is nothing wrong with a comforting delicious sandwich for lunch! That’s what the boys had here too…I, of course, had a salad. This is so typical of our lunches here during the summer!

      I’m so glad! Actually the rain HERE is what inspired me to make them today! 🙂 Chad is lucky the weather got bad so early in the week otherwise he would’ve had to wait for these little guys for a while!

    my husband will thank you. He LOVES M&M cookies. I think he could eat a whole batch in one sitting haha good things hes active!!
