If you’ve been following my Instagram stories lately then you’re already well-versed on my love for cherries!

If not, then let me tell you.  I ♥️ cherries.  They’re one of the fruits I look most forward to come the warmer months and I find every way possible to incorporate them into my daily meals and snacks.

Don’t get me wrong, I have NO problem eating them straight up, but they’re such a delicious fruit that I feel like they deserve to be incorporated into just about everything.

For breakfast, try this cherry almond vanilla baked oatmeal.  And for lunch, I present to you this delicious cherry feta & farro salad.  

Sweet cherries and nutty farro sit atop a bed of peppery arugula and then get topped with salty feta & crunchy walnuts for the most delicious mid-day meal.

If you want an additional protein boost (you’re getting some from the farro, feta and the walnuts!) you could easily throw in some chickpeas or chicken.

This makes for great all-in-one packed lunch and one-stop-shop mid-day meal (or lazy night dinner!)

I also HIGHLY recommend investing in this $13 cherry pitter. It makes the whole cherry eating experience SO much more tolerable!

Description

this easy grain salad combines peppery arugula with sweet cherries, salty feta & nutty farro finished off with crunch walnuts for a flavor & texture explosion in every bite!


Ingredients

Scale
  • 4 large handfuls arugula
  • 1 cup farro (cooked in low sodium vegetable stock)
  • 1/2 cup feta
  • 1 cup fresh cherries, pitted
  • 1/4 cup walnut halves, roughly chopped
  • 1/4 red onion, sliced thin
  • salt & pepper, to taste
  • balsamic vinaigrette (or dressing of choice)

Instructions

  1. Combine everything in a bowl, toss together & enjoy!
