This easy chicken salad comes together in minutes and uses tart plain yogurt in place of the usual mayonnaise, providing an additional boost of protein.  Perfect to pack for lunch or eat in a sandwich as a mid-day meal!

I know you guys, like me, are always on the hunt for easy mid-day meals that are balanced and filling, but also taste delicious.

With that in mind, I present to you this easy chicken salad!  It comes together in just minutes, tastes incredible and is full of nutrition.

I swapped out the usual mayo that you find in chicken salads (making them feel heavy and greasy) with my favorite 4% plain siggi’s yogurt (both regular and lactose-free would work here, so if you’re lactose intolerant, you can still enjoy this sandwich!).  The switch not only gave the sandwich an added boost of protein, but thanks to siggi’s lower sugar and simple ingredients, the true flavors of the sandwich remained intact while feeling much lighter (and a lot less greasy!). 

All you need are just a few simple ingredients to make it.  It’s actually a great meal to make if you’re having chicken for dinner (grilled, rotisserie, baked…anything goes!) because it makes great use of any leftovers!  I love any meal that can make leftovers feel like something new and special and this does exactly that!

You can also pack it up with some crackers and carrot sticks for an easy lunch you or your kids can take to work with you!

Since this is definitely a chicken salad that leaves you feeling satisfied without feeling totally weighed down, it makes for a perfect camp lunch for kids.  They can eat up and be right back at their activities after lunch.  It’s also great for back to school (since somehow it’s already August!).

I promise though, no matter how you eat it (over a big old salad, packed up as a lunch, in a sandwich with your favorite chips) it will not only keep you going for the rest of the afternoon, but it’ll be flavorful and satisfying as well!  Can’t beat that in a mid-day meal if you ask me!

Description

This easy chicken salad comes together in minutes and uses tart plain yogurt in place of the usual mayonnaise, providing an additional boost of protein.  Perfect to pack for lunch or eat in a sandwich as a mid-day meal!


Ingredients

Scale
  • 2 cups cooked chicken breast, shredded or cubed (rotisserie, baked or grilled all work)
  • ¼ cup 4% plain siggi’s or lactose-free siggi’s
  • 2 teaspoons lemon juice
  • 1 teaspoon spicy brown mustard
  • 1 stalk of celery, washed, leaves removed, ends cut and sliced
  • ½ – 1 tablespoon minced shallot
  • ½ – 1 tablespoon minced fresh parsley
  • 2/3 cup seedless grapes, halved
  • Salt & pepper, to taste
  • Optional: 1-2 tablespoons roughly chopped pecans

Instructions

  1. Add everything to a large mixing bowl and stir well to combine.
  2. Serve in any way you see fit (over a large salad, in a sandwich or with crackers for dipping!)

Notes

  • Chicken salad will last 3-5 days in an airtight container in the fridge
