these turkey meatballs are loaded with mediterranean flavor and even sneak a little veggies in! they’re easy to make, baked in the oven and pack a great punch of protein per bite.

Since I meal prepped Owen’s veggie-loaded meatballs last week, I decided I wanted to make a version of these for myself and Chad to have for dinners as well.

Everyone in our household is a big fan of spanakopita so feta and spinach seemed like a perfect pair.

And let me tell you, they were a total hit! The feta cheese gets all gooey and creamy, the spinach is super tender so it doesn’t disrupt the otherwise smooth texture of the meatballs and the flavor is OH-SO delicious.

There are also so many ways you can serve these up. I had prepped a little whole wheat orzo to serve them over for easy dinners but also ended up making a quick homemade flatbread and throwing a few on there gyro style which was probably my favorite way to eat these!

I slathered a little tzatziki sauce on the bottom (I like to make my own, but store-bought also works, same with the flatbread!) then followed that with some diced cucumber, tomatoes, red onion and warmed spinach & feta meatballs. I topped all of that with a little more feta & tzatziki (you could also do hummus!) then a drizzle of olive oil and a sprinkling of black pepper.

Amazing.

If you choose to make these, I highly recommend making them gyro style at least once – it was one of my absolute favorite things I ate last week! And it was so ridiculously easy to pull together (especially when the meatballs are prepped over the weekend and all you’re having to do is heat them!).

Even with making my own flatbread the entire meal took me less than 15 minutes start to finish (and then only another 5 minutes to inhale it because it was so good!).

Regardless of how you choose to serve them, I promise you you’ll love them! If one for the sole fact that you can prep them the weekend before and have them on hand for easy meals during the week!

Description

Ingredients

Scale
  • 1 shallot, peeled
  • 2 cloves garlic, peeled
  • 2 large handfuls fresh baby spinach
  • 1–2 teaspoons dried oregano
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • Salt and pepper, to taste
  • 1/3 cup crumbled feta cheese
  • 1 lb ground turkey

Instructions

  • Preheat oven to 375 degrees F and line a baking sheet with parchment paper
  • Combine shallot and garlic in the food processor and pulse until minced
  • Add spinach and pulse a few times until minced
  • Add oregano, breadcrumbs, salt & pepper, feta cheese and egg and pulse until just mixed.
  • Add ground turkey to a large mixing bowl and top with ingredients in the food processor.  Mix with your hands (you can wear gloves!) until all the other ingredients are well distributed throughout the ground turkey meat.
  • Using a cookie scoop, scoop into the palm of your hand and roll into a ball (note you don’t have to roll it if you’d prefer to just go from the cookie scoop to the tray, it won’t affect anything but the shape of the meatball). Repeat until all of the mixture has been used.
  • Bake for 25-30 minutes or until golden brown or until a meat thermometer reads at least 165 degrees F.

Notes

Store in an airtight container in the fridge for 4-5 days.  Freeze for up to 2 months.
