Getting Giddy

It’s another Fall-like morning weather-wise out there and try as I might not to get too excited about it…it’s definitely getting me a little giddy!

Summer is wonderful, don’t get me wrong.  Baseball games, watermelon, barbecues, ice cream, longer days…

But there’s just something about Fall that steals my heart.

The perfect running weather.

The clothes!

Apple picking (and baking!).

Pumpkin carving (and eating).

But alas, we’re not quite there yet.  So from here on out it will be summer celebrations and summer celebrations only!  I know that will make this girl happy!

Speaking of this girl…she posted this picture on Instagram yesterday morning that pretty much decided my breakfast for me today

2 hard boiled eggs + 2 slices of homemade whole wheat quinoa bread slathered in a little earth balance.

The eggs were every bit as good as I knew they would be.

The bread didn’t do such a bad job either.

On the side I also guzzled ate a glass of orange juice oranges:

Not such a bad way to start the day…I gotta say!

    I feel the same way about fall! It’s my favorite season. I’ve been feeling kinda guilty because I should enjoy summer instead of wishing it to be fall, but I just can’t help it!

    Golly it is hot here! Not a thought of fall in sight! ….. I would rather eat my fruit than drink it but I just love that you put it in a glass- added fun to breakfast!

    While I love summer too, fall will always be my favorite season. The smell, the weather, the leaves, pumpkin, warm chili and soups. The clothes! I live for fall!

    I haven’t had quinoa bread, but I do love that butter-like spread. It’s sooooo good.

    And dangit – now you’ve got me giddy about fall! haha

    You have me in the mood for fall now! Not so much in LA, but when I am home in Missouri, the fall, particularly October, is my most favorite time of the year! Nothing beats the fall breeze, the leaves on the trees, and the pumpkin spice latte from Sbux! 🙂 Hope studying is still going well for you!

    Fall is my favorite! I love the chill in the air where putting a sweater on and holding a cup of coffee or cider just warms you right up! Sadly, I don’t get fall is SoCal…. 🙁

      Yes! Exactly!! And ugh, that’s a bummer…but you probably have nicer year-round weather than we do here on the east coast so it’s not THAT much of a bummer 🙂

    I’ve been enjoying pumpkin vanilla oats these days. Seriously, I’m channeling fall like nobody’s business. Wishful thinking that the heat will not make me spontaneously combust. Breakfast looks amazing!

    Makes me verrrrry happy. It’s been 105 degrees here for a week and I LOVE it. I also love your glass full of oranges – ahhh, they look refreshing!

      I didn’t – but here it is!

      The only thing I did differently was to replace the vital wheat gluten with quinoa flour 🙂 Enjoy!

    Love your website. Your pics always inspire me to cook more and to eat healthier. A couple of questions…
    1. Your eggs came out perfectly. Can you share your recipe for your perfect boiled eggs? 🙂
    2. I’m impressed with your portion sizes for most of your breakfasts (esp waffles!) considering how thin and in-shape you look. Do you finish eating everything you photo? 🙂

      I’m so glad to hear it! For the hard boiled eggs – I simply submerge the eggs in water + salt then place them on the stove top on HIGH. Once the water comes to a boil, I turn the heat down slightly (to about medium high, but so the water is still a slow boil) and then set the timer for 10 minutes. After the timer dings, remove from the heat, submerge in cold water and then peel and enjoy! 🙂

      As for my portions – I most usually eat everything on my plate at breakfast. If I don’t finish it for some reason, I usually mention it, but the majority of the time I gobble up every last crumb 🙂 Ultimately though I listen to my body, if I’m full before I finish, I stop. But I usually wake up pretty darn hungry so I don’t often fill up without finishing.
