Let’s face it, weekday mornings are busy. Even if we wake up early those precious morning hours still seem to slip right through our fingers in no time!
Becoming a mom has made the morning rush even more real. My current routine is to wake up anywhere between 4:30 and 6:30 when I hear Owen stirring. I change him, we sing songs, he gets his morning feeding and burping then we have playtime. In between play sessions I’ll let Ollie (our dog) out and feed him and I also hit “brew” on my coffee. Before I know it, it’s time for Owen’s next meal of the day and Ollie wants to go out again! I’ll open the back door to let Ollie out while I mix up Owen’s fruit and cereal. Ollie comes in, I pop Owen in his highchair and get started on feeding him. When he’s finished with that we clean up (because fruit and cereal somehow finds its way everywhere!), play a little more, he gets another diaper change and then it’s time for his morning nap. We read books and sing songs in the rocking chair then he goes down in his crib. Once he’s down I quickly wash my face and get dressed for the day and am then finally able to come down and eat my breakfast!
While I certainly wouldn’t change it for the world, it’s definitely a far cry from my old morning routine which was all about me. I’d get a workout in, a shower, leisurely drink my coffee while reading some morning news or catching up on email and make myself an elaborate breakfast.
That said, just because my morning routine has shifted, doesn’t mean that I’m willing to neglect my nutrition. I’ve always been a firm believer in the importance of breakfast and frankly, I wouldn’t be able to get by without it!
Now however, I just look for quick and easy breakfast options – because truthfully, there are mornings where even waiting for the toaster oven to toast my bread takes a little too much time! My philosophy is the same as it’s always been, I aim to include whole grains, heart-healthy fat, protein and a fruit or veggie – a combination I know will fuel me through the morning.
You all know by now my love affair with all things belVita Breakfast Biscuits. I relied on them to help me get through many an early morning hour before Owen was sleeping through the night because they took the edge of my hunger and helped to sustain my energy. In each packet, you get four lightly sweetened, crunchy biscuits containing a combination of whole grains carefully baked to release energy regularly and continuously to fuel your body throughout the morning. You can eat them straight out of the packet (which I’ve done!) but I also like to get creative with them.
Since I love an avocado/egg toast but definitely don’t have the time to whip up two over-easy eggs in the morning, I created this fun shortcut version! I get a delicious crunch by using the belVita Golden Oat Breakfast Biscuit and just use hard boiled eggs that I whip up on the weekends and slice in the morning when I’m ready! Other than that, it’s just spreading a little mashed avocado and sprinkling with feta, salt and pepper and my meal is ready in under 5 minutes. It’s truly a delicious lifesaver with how busy my mornings have become and I hope it saves all of you some precious morning minutes as well!
Ingredients
- 1 packet of the belVita Golden Oat breakfast biscuits
- 2 hard boiled eggs, sliced
- ½ a ripe avocado, mashed
- 4 tablespoons feta cheese
- Salt & pepper to taste
Instructions
- Place belVita Golden Oat breakfast biscuits on a plate
- Spread each biscuit with avocado (feel free to add a little fresh lime juice!), followed by 2 slices of hard-boiled egg and a sprinkling of feta, salt & freshly ground black pepper to taste.
- Serve with a piece of fruit (I love oranges or clementines with this breakfast!)
